Mandarin Cake / Gato de Mandarina

This is a variation of the Gato Mallorquin, a typical Majorca Cake. The truth is this cake is very very easy, the recipe has come from a workmate.

Ingredients:
2 cups Almond chopped very finely
1 and 1/2 cup white sugar
6 eggs
3 mandarins or 2 little sweet oranges

We boil the entire mandarins, for approximately 1 and a half hours, making sure that the water is not boil away. Remove to cool, then cut open the mandarins, remove the pips and mash (including the skin!) and we put in the icebox, just to cool them quickly.

Separate the whites of the eggs and beat until a large volume of froth is formed.

Mix the yolks with the sugar and the chopped almond, add the completely cold mash and mix with the beaten whites of egg.We put it in a 20-24cm mold greased with butter in order that it does not stick ... !!! We put to a medium(180ºc) oven 1h (aprox). Serve with vanilla icecream.

The flavour is very, very amazing !
